The main ingredient in Campden Tablets - Sodium Metabisulphite can be used to kill off wild yeast in wine or cider so as to prevent off-flavours from these natrual yeasts or other bacteria. Sulphites can also be used to stop a fermentation by killing your yeast but this is best done in conjunction with fermentation stopper (Potassium Sorbate)
